Tamarind is a fruit that grows as a legume pod from a tree, with a tangy flavour that has become world-renowned! Thought to originate from tropical Africa, it's such an ancient staple in different cuisines, some debate that it could also be indigenous to India as well, who is now the world's biggest producer. Sweet and sour, it's high in B vitamins and calcium. It's considered commonly to be too sour, a little sweeter than lemon, and similarly perfect for sauces, curries, drinks, confections and other recipes. In Western cuisine, it can actually be found in HP and Worcestershire sauce!
